Ingredients
- 1 1/2 lb grnd beef
- 1 c. minced onion
- 1/4 c. seasoned bread crumbs
- 2 x Large eggs, lightly beaten
- 3 tsp minced fresh parsley
- 1 tsp Thick and Chunky Salsa
- 1/2 tsp salt
- 1 x 24 ounce. jar Thick and Chunky Salsa either mild, medium or possibly spicy - I use mild
- 1 c. water
- 1 x 6 ounce. can tomato paste
- 2 clv garlic, finely minced
- 1 x canned chipotle chili in Adobo sauce, finely minced
Directions
- Meatballs:Combine all ingredients in large bowl; mix well. Form mix into 18 meatballs and place in greased 9x13 inch pan.
- Sauce:Combine all ingredients in a large bowl. Pour over meatballs. Bake at 350 for 1 hour till meatballs are done.
- This can be frzn before baking. If doing which, thaw first and bake 90 min to ensure doneness.
