Ingredients

  • 1 1/4 tsp garlic pwdr
  • 1 1/4 tsp grated fresh ginger black pepper (generous grind)
  • 1 lb extra lean grnd beef
  • 3 Tbsp. finely minced green onion
  • 1 x egg
  • 1/2 c. French-bread crumbs (2 slices)
  • 1 c. uncooked rice
  • 1 x 8 ounce

Directions

  1. Can no-sugar-added pineapple chunks in natural juices1/4 c. firmly packed brown sugar 2 Tbsp. cornstarch1/4 c. white wine vinegar1 tsp. light soy sauce2 green bell peppers - cut in thin stripsor rings
  2. Instructions:In bowl, sprinkle garlic pwdr, ginger and black pepper over meat. Add in onion, egg and bread crumbs. Blend till well mixed. Shape into 1" balls.
  3. Cook meatballs in a nonstick skillet over medium heat till well browned on all sides. Set aside and keep hot.
  4. Cook rice according to package directions, omitting salt and butter or possibly margarine.
  5. Drain pineapple chunks, reserving liquid. Mix reserved juice with water to make 1 c.. Pour into skillet. Add in brown sugar, cornstarch, vinegar and soy sauce. Heat, stirring constantly, about 3 min, or possibly till sauce thickens. Add in meatballs, pineapple chunks and bell pepper. Stir to coat proportionately with sauce. Cover and simmer 10 min.
  6. Serve over rice.
  7. Serves 6.
