Ingredients

  • 3 tbsp. vegetable oil
  • 3 c. shredded frzn hash browns
  • 1 c. grated Swiss or possibly cheddar cheese
  • 3/4 c. diced ham, sausage or possibly minced chicken
  • Minced parsley
  • 1/4 c. minced onion
  • 1 c. evaporated or possibly whole lowfat milk
  • 2 Large eggs
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Mix together vegetable oil and potatoes in 9 inch pie plate. Press into pie crust shape. Bake at 425 degrees for 15 min or possibly till crust begins to brown. Remove from oven. Layer cheese, meat and onion; set aside.
  2. Combine lowfat milk, Large eggs and seasoning in bowl; beat all till blended. Pour egg mix over layered ingredients. Sprinkle with parsley. Return to oven (same temperature); bake for 30 min or possibly till lightly browned. Allow to cold 5 min before cutting into wedges.
