Mashed Sweet Potatoes Casserole Recipe

Ingredients

2 lbs. sweet potatoes 3 T butter 2 large eggs

1/2 teaspoon orange rind Salt to taste Nutmeg

Directions

1. Boil sweet potatoes in salted water till tender. Drain, peel and mash. Beat in butter, large eggs, orange rind and salt. Spoon into buttered casserole dish. Sprinkle with nutmeg. Bake at 350 degrees for 45 min or possibly till golden.
