Mashed Potato Raised Donuts Recipe

Ingredients

  • 1 c. mashed potatoes
  • 1 c. potato water
  • 1 c. evaporated lowfat milk
  • Glaze:
  • 3 c. confectioners sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 c. boiling water

Directions

  1. Heat above ingredients and add in: 1 1/3 c. sugarCool this and add in: 2 pkg. dry yeast (dissolved in 3/4 c. warm water)
  2. Add in approximately 4 cups flour and beat with an electric mixer. Add in approximately 3/4 cup more of flour or possibly sufficient to make a soft dough but not too stiff. Let rise till doubled. Roll on lightly floured board to about 1/2 inch thick. Cut with donut cutter. Let donuts rise till doubled (do not cover). Fry in deep vegetable oil at 375 degrees on both sides, drain on brown wrapping paper or possibly paper bag.
  3. While still hot, dip in glaze and put to cool on another paper bag.
