  • 2 1/2 pound broiler-fryer chicken
  • 1/2 c. all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • Vegetable oil
  • 2 Large eggs
  • 2 tbsp. water
  • 2 c. cracker crumbs or possibly dry bread crumbs

Directions

  1. Cut chicken into pcs; cut each breast half into halves. Mix flour, salt, paprika and pepper in a bowl.
  2. In a separate bowl, blend Large eggs and water. In a third bowl pour bread or possibly cracker crumbs. Heat oil (1/4 inch) in 12 inch skillet. Coat chicken with flour mix. After coating with flour, dip pcs into egg mix, then into bread or possibly cracker crumbs.
  3. Cook chicken in oil over medium heat till light brown, 15 to 20 min; reduce heat. Cover tightly and simmer, turning once or possibly twice, till thickest pcs are done, 30 to 40 min. If skillet can't be covered tightly, add in 1 to 2 tbsp. of water. Remove cover during last 5 min of cooking to crisp chicken. Makes 8 servings.
