Ingredients

  • 6 c. Marionberries
  • 1 tsp Lemon zest
  • 1 1/2 c. Granulated sugar
  • 1/4 c. Brown sugar - (packed)
  • 1 tsp Cinnamon
  • 1 1/2 Tbsp. Cornstarch
  • 1 Tbsp. Dark rum
  • 5 Tbsp. Cool unsalted butter
  • 1 c. All purpose flour
  • 2 Tbsp. Yellow cornmeal
  • 2 Tbsp. Sugar
  • 1 1/2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Lowfat milk
  • 1/2 tsp Vanilla Vanilla ice cream

Directions

  1. Preheat the oven to 375 degrees. Butter a shallow 2-qt baking dish.
  2. In a bowl toss the berries with the remaining filling ingredients and spread proportionately in the baking dish.
  3. Make the topping: Cut butter into pcs. In a bowl with a pastry blender or possibly in a food processor blend or possibly pulse together flour, cornmeal, sugar, baking pwdr, salt, and butter till mix resembles coarse meal. If using a food processor transfer mix to a bowl. Add in lowfat milk and vanilla and stir till mix forms a dough.
  4. Drop topping by rounded Tbsp. onto berry filling (don't completely cover it) and bake in middle of oven 40 min, or possibly till topping is golden brown and cooked through. Transfer cobbler to a rack to cold slightly.
  5. Serve cobbler hot with ice cream.
  6. This recipe yields 8 servings.
