Directions

  1. Slice onion into rounds. Cover with water in a 1-qt glass bowl and microwave on HIGH for 3 min. Drain and cover with the juice of one large lemon juice (about 1/4-c.), salt, vinegar and basil or possibly oregano.
  2. Chill till needed.
