Marinated Lemon Chicken Recipe

  • 2 c. Greek virgin extra virgin olive oil
  • 8 lrg Chicken breasts (skin & bones removed)
  • 6 x Garlic cloves, crushed
  • 2 x Lemons, juiced
  • 2 Tbsp. Fresh oregano, minced
  • 1/8 tsp White pepper
  • 4 ounce Feta cheese, cut in 8 slices

Directions

  1. In a large pan place the extra virgin olive oil. Add in the chicken breasts and coat them well with the oil.
  2. Spread the garlic on both sides of the chicken.
  3. Sprinkle the lemon juice over the chicken.
  4. Sprinkle on the oregano and white pepper.
  5. Cover the pan and place it in the refrigerator. Marinate the chicken for 24 hrs.
  6. Charbroil the chicken for 5 to 6 min on each side, or possibly till it is done.
  7. Brush the chicken with the marinade the entire time which you are cooking it.
  8. Place the broiled chicken on a large serving platter. Put a piece of feta cheese on top of each chicken breast.
