Ingredients
- 1 lb small summer squash (yellow or possibly crookneck)
- 4 lrg garlic cloves peeled
- 1/8 tsp salt
- 4 Tbsp. lemon juice
- 2 Tbsp. water
- 4 Tbsp. extra virgin olive oil
- 1 Tbsp. fresh oregano leaves
- 2 tsp fresh thyme leaves
- 2 Tbsp. fresh basil leaves
Directions
- Prepare Summer Herb Marinade: Add in all ingredients to the blender. Blend till smooth and chill till needed. (
- Makes about 3/4 of a c.)
- Preheat a gas grill to high, or possibly build a fire in a kettle grill.
- Wash and slice squashes lengthwise into quarters or possibly about 1/3-inch-thick slices.
- Add in marinade to a shallow bowl. Add in squash to the bowl and marinate 30 to 60 min turning occasionally to mix marinade with squashes.
- Add in squashes to a vegetable grilling basket and grill 7 to 10 min, turning, till squashes are charred but still fork tender.
- This recipe yields 4 to 6 servings.
- Comments: Crookneck, zucchini, and the yellow sunburst squash all come to life on the grill. A grilling basket is a very useful tool on the grill for vegetables so which they won't fall through the grill.
