Ingredients

  • 1/2 c. olive or possibly vegetable oil
  • 2 garlic cloves, peeled and sliced
  • 3 tbsp. finely minced parsley
  • 3 tbsp. finely minced onion
  • 1 (28 ounce.) can whole tomatoes
  • 1 bay leaf
  • Dash of salt
  • Dash of black pepper
  • Fresh basil leaves (optional)

Directions

  1. In a large saucepan, heat oil over medium heat. Add in garlic and saute/fry for 2 to 3 min. Add in parsley and onion. Slowly add in tomatoes. Stir to break up tomatoes. Add in bay leaf, salt and pepper. Bring to a boil. Cover and simmer sauce over low heat for about 15 min for flavors to blend.
  2. Add in some fresh finely minced basil leaves, if you like. Serve sauce with spaghetti or possibly other pasta dishes or possibly with rice.
