Ingredients

  • 2 med Onions, finely minced
  • 1 med Green chili pepper, chopped
  • 2 med Garlic cloves
  • 1/4 tsp Cayenne pepper
  • 1/2 ounce Regular dark chili pwdr
  • 1/2 ounce Cumin
  • 5 ounce Tomato sauce
  • 3 ounce Bulk pork sausage
  • 3 lb Prime beef, coarsely grnd
  • 1/2 tsp Coriander, grnd
  • 1 c. Beef broth, canned
  • 1/2 c. Oregano tea, see directions
  • 2 Tbsp. Kidney suet/lard
  • 2 ounce Gebhardt's Chili Pwdr White pepper, to taste Red pepper sauce, to taste Cayenne pepper, to taste

Directions

  1. To make the Oregano Tea:Let 1 Tbsp. dry oregano leaves steep in 1/2 c. warm water for 30 min, then strain out leaves and throw away. Use the liquid which remains.
  2. To make the chili:Saute/fry' onions and garlic in suet about 3 min. Add in Gebhardt's and Regular dark chili pwdr. Mix well. Brown beef in separate pan a lb. at a time, adding White Pepper to taste while browning. Add in to onions and spices; use a little beef broth to keep from sticking.
  3. Saute/fry' sausage and chopped Green Chili Pepper about 2 min. Add in to pot with meat and onions and cook about 15 min. Add in New Mexico Chili Pwdr, Cumin, Coriander, Tomato Sauce and remaining broth, mixing well.
  4. Cook about 30 min. Add in Oregano Tea. Cover and cook over low heat about 2 hrs or possibly till meat is tender, stirring occasionally. During the last 20-30 min add in Salt, Cayenne Pepper, and Red Pepper Sauce, if needed.
  5. NOTES : The 66-year-old Mrs. Knudson was the fifth woman to win the world title. It took her five years to perfect her winning recipe, that was handed down from her father, a restaurant chef. "It has a little bite to it, but which's what makes it good," she said, in winning the $25,000 top prize at the 21st annual World Championship Chili Cook-off at Tropico Gold Mine, Rosamond, California.
