Ingredients
- 2 med onions, minced
- 6 x Cloves garlic, approximately
- 2 Tbsp. Kidney suet or possibly lard (caudal fat)
- 2 ounce Gebhardt's Chili Pwdr
- 1/2 ounce Regular dark chili pwdr
- 3 lb Prime beef, cubed or possibly Coarsely grnd White pepper to taste
- 1 c. Beef broth
- 3 ounce Bulk pork sausage
- 1 med green chili pepper, Chopped
- 1/2 tsp Warm New Mexico chili pwdr
- 1/2 ounce Cumin
- 1/2 tsp Coriander (optional)
- 6 ounce Tomato sauce
- 1/2 c. Oregano tea (1 Tablespoons oregano Steeped in warm water 30 minutes.
- 1/2 ounce Salt
- 1/4 tsp Cayenne pepper (if needed) Dash Tabasco Sauce
Directions
- Saute/fry onions and chopped garlic in suet about 3 min. Add in Gebhardt's and regular chili pwdr. Mix well.
- Brown beef in another pan, a lb. at a time, adding white pepper while browning. Add in meat to onions and spices, using a little broth to keep from sticking.
- Saute/fry sausage and green chili pepper together 2 min. Add in to the pot along with meat and onions. Cook 15 min.
- Add in New Mexico chili pwdr, cumin, coriander, tomato sauce and remaining broth. Mix well and cook for 30 min.
- Add in oregano tea (strained). Cover and cook over low heat about 2 hrs or possibly till meat is tender, stirring occasionally.
- During the last 20 or possibly 30 min add in salt, cayenne pepper and Tabasco, if needed.
