  3. Many supermarkets now carry smoked boneless pork chops. Thinly sliced and ready-to-eat, they are delicious and highly versatile. Here, the subtly smoked pork comes to the breakfast table as a lean alternative to bacon. If you cannot find the smoked pork chops, Canadian bacon may be used instead.
  4. 1. Heat butter in 10-inch non-stick skillet over medium-high heat. Add in maple syrup, mustard and red pepper. Mix well and cook several seconds till bubbly. Add in bourbon, if using.
  5. 2. Add in pork slices. Cook, turning several times, till edges of meat are deeply glazed, 4 to 5 min.
