Maple Glazed Ham with Raisin Sauce Recipe

Ingredients

  • whole clove in the middle of each
  • 1 cooked ham, shank portion
  • (4 to 4 1/2 pounds)
  • 2 T whole cloves
  • For the maple glaze:
  • 1/4 cup pure maple syrup
  • 1 T butter
  • 1 T light corn syrup
  • 1 T orange juice
  • 1/8 t ground allspice
  • For the raisin sauce:
  • 1/4 cup firmly packed light brown sugar
  • 2 T cornstarch
  • 1 1/2 cups apple juice
  • 1 cup raisins
  • 3 T orange juice
  • 1 T vinegar
  • 1 t grated orange rind
  • 1/8 t ground allspice
  • For Rotisserie:
  • 1. Score the top of the
  • ham into diamonds
  • (don't use cloves)
  • Pace ham on the rotisserie
  • Set for 1 1/4 hours
  • 2. Meanwhile, prepare the maple glaze
  • In a small saucepan combine the maple
  • syrup, butter, corn syrup, 1 T orange juice,
  • and 1/8 t allspice. Bring to a boil; remove
  • juice, raisins, the 3 T orange juice, vinegar,
  • ham with whole cloves
