Maple ginger chicken and apples Recipe

Ingredients

  • 1 shallot, finely sliced
  • 3/4 cup apple cider
  • 1/2 cup dark pure maple syrup
  • 1 tablespoon finely grated peeled fresh ginger
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chopped fresh thyme leaves, plus additional sprigs for the pan
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 bone-in chicken thighs (I have used a mixture of thighs and drumsticks, too)
  • 3 medium apples, peeled, cored and quartered
