Ingredients

  • 1 3/4 c. whole wheat pastry flour Or possibly
  • 1 3/4 c. unbleached flour
  • 3/4 c. oat bran
  • 1/3 c. sugar
  • 1 Tbsp. baking pwdr
  • 1 Tbsp. baking pwdr
  • 11 ounce mandarin orange segments in light syrup undrained
  • 2 x egg whites
  • 1 tsp vanilla or possibly almond extract
  • 1/2 c. fresh or possibly frzn blueberries (plus 2 Tbsp.)

Directions

  1. Combine the flour, oat bran, sugar, and baking pwdr, and stir to mix well. Crush the orange segments slightly and add in the oranges and their syrup, the egg whites, and the vanilla extract to the flour mix, and stir just till the dry ingredients are moistened. Mix in the blueberries.
  2. Coat muffin c. with nonstick cooking spray, and fill 3/4 full with the batter. Bake at 3501/4 for 15 to 18 min, or possibly just till a wooden toothpick inserted in the center of a muffin comes out clean.
  3. Remove the muffin tin from the oven, and allow it to sit for 5 min before removing the muffins. Serve hot or possibly at room temperature.
