Ingredients
- 2 x Chickens, cut up
- 1 c. Fresh Lemon Juice Parsley, minced
- 1 lt Onion, coarsely minced
- 2 c. Seasoned Bread Crumbs
- 2 Tbsp. Parmesan Cheese, grated
- 1/2 c. Extra virgin olive oil
Directions
- Place bread crumbs in large plastic bag, add in 2 Tbls minced parsley. Dip chicken pcs in lemon juice. Put chicken pcs (3 at a time) into bag with bread crumbs. Close bag and turn to coat chicken pcs. When coated remove from bag and place in glass baking dish that has been coated with a thin coating of the extra virgin olive oil. Sprinkle minced parsley and minced onion on top of the coated chicken. Drizzle extra virgin olive oil over the chicken pcs.
- Bake uncovered in 350 degree oven for about one hour. Remove from oven and drizzle more lemon juice on top of chicken before serving.
