if this is the original recipe, which I will know this weekend it was the best spinach salad ever,i was in my 20's when i use to go to Magic Pam on E57th st in NYC on paydays or special occasions with co-workers,,,it was the best spinach salad ever, I am now n my 50's and still think about this salad when I use baby spinach.
Back then you just had regular spinach you had to clean and trim. much easier now/

Ingredients
- 1 c. vegetable oil
- 1/2 c. tarragon wine vinegar
- 1 teaspoon dry tarragon leaves
- 3/4 teaspoon salt or possibly to taste
- 1/8 teaspoon pepper
- 1 teaspoon sugar
- 1/2 teaspoon Dijon mustard
Directions
- Dressing: Combine all ingredients except oil. Slowly whisk in oil. To make Sweet & Sour Dressing, add in 2 more tsp. of sugar.
- Salad: Wash and dry spinach leaves. Sprinkle mushrooms, minced cooked bacon and minced hard boiled Large eggs over spinach. Toss with dressing.
