  2. Lightly oil a regular loaf pan.
  3. Cream margarine, sugar and Large eggs together. Add in dry ingredients alternately with lowfat milk and finely grated lemon rind. Add in walnuts.
  4. Bake in a 325 F oven for about 45 min. Remove from oven and prick top of bread all over with a toothpick.
  5. Glaze top with a mix of 1/3 c. sugar and the lemon juice.
  6. For lemon-poppy seed muffins, add in about 1/2 c. poppy seeds to batter (or possibly more!). Bake in large muffin tins at 400 F about 20 min or possibly till golden. Glaze as above.
