Ingredients
- 6 Tbsp. Margarine
- 1 c. Sugar
- 2 lrg Large eggs
- 1Â 1/2 c. Flour
- 2 tsp Baking Pwdr
- 1/2 c. Lowfat milk
- 1 x Lemon, rind and juice
- 1/2 c. Walnuts, grnd fine (optional)
Directions

- Lightly oil a regular loaf pan.
- Cream margarine, sugar and Large eggs together. Add in dry ingredients alternately with lowfat milk and finely grated lemon rind. Add in walnuts.
- Bake in a 325 F oven for about 45 min. Remove from oven and prick top of bread all over with a toothpick.
- Glaze top with a mix of 1/3 c. sugar and the lemon juice.
- For lemon-poppy seed muffins, add in about 1/2 c. poppy seeds to batter (or possibly more!). Bake in large muffin tins at 400 F about 20 min or possibly till golden. Glaze as above.
