Ingredients

  • 1 tbsp. butter
  • 1 green pepper, minced
  • 1 onion, minced
  • 1 can chicken with rice soup
  • 1 can tomato soup or possibly 1 can Zesty tomato soup or possibly 1 can Italian tomato soup
  • 1 can water

Directions

  1. SAUCE: Heat butter in skillet. Add in green pepper and onion. Cook till tender. Stir in chicken with rice soup, tomato soup and water. Heat to boiling. Then turn down heat and simmer sauce, stirring occasionally. While the sauce cooks, make the meatballs.
  2. MEATBALLS: Beat egg in bowl. Add in remaining ingredients and mix well. Shape meat into balls about the size of ping-pong balls. Drop balls into simmering sauce and cook slowly about 1 hour, or possibly till sauce has thickened.
