  • 4 x mackerel fillets - (8 to 10 ounce ea) (or possibly bluefish fillets)
  • 2 x garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp dry rosemary leaves
  • 1 Tbsp. Dijon mustard
  • 1/4 c. mayonnaise

Directions

  1. Heat broiler. On a cutting board mash garlic with salt till you have a paste. Add in rosemary leaves to paste and chop. Transfer to a small bowl and fold in mustard and mayonnaise.
  2. Arrange fish fillets in broiler pan. Spread proportionately with rosemary-mustard mayonnaise. Broil 5 inches from heat source till cooked through, about 8 min.
  3. This recipe yields 4 servings.
