  • 2 lbs. boiled, cleaned, seasoned shrimp
  • 2 c. cooked macaroni
  • 1 c. frzn English peas, thawed
  • 2 hard-cooked Large eggs, minced
  • 1 green bell pepper, minced
  • Minced green or possibly black olives
  • 1 tbsp. minced onion
  • 1 c. mayonnaise
  • 1/2 teaspoon salt
  • Dash of pepper
  • Lettuce
  • Tomatoes

Directions

  1. Mix shrimp, macaroni, uncooked peas, Large eggs, green pepper, olives, and onion. Blend mayonnaise, salt and pepper. Pour over shrimp mix and gently stir. Chill. Serve on lettuce. Dress with tomato wedges.
