Macaroni Salad with Durkee's Dressing for a Large Group

Durkee's, one of the best bottled dressings on the market for sandwiches, and other things, is available in high end supermarkets, like Tom Thumb, Central Market, etc.

Prepare this salad several hours in advance and refrigerate.

Ingredients

  • 1 lb. package any size macaroni, cooked al dente in salted water
  • 1 cucumber, peeled, cut in small chucks as pasta
  • 1 bunch green onions, sliced
  • 1 cup celery, sliced
  • 1 1/2 cup cubed cheddar cheese, or your favorite
  • 1 cup cherry tomato halves
  • Dressing:
  • 2 cups mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup half and half
  • 3 tbs. Durkee's
  • 2 tsp. Dijon mustard
  • 1 1/2 tsp. salt or seasoned salt
  • 1 tsp. sugar
  • 1/2 tsp. fresh ground pepper
  • 1/4 tsp. celery seed
  • 1/4 cup sweet pickle relish
  • garnish: chopped parsley
  • 1/2 tsp. fresh ground pepper

Directions

  1. Prepare pasta al dente. Dry with paper towels.
  2. Toss with other salad ingredients, except tomatoes.
  3. Make the dressing. Toss lightly with pasta. Add tomatoes and toss again.
  4. Garnish with parsley and store in fridge.
  5. Best left overnight in fridge for maximum flavor.
