  • 1 can Minced artichokes, plus liquid
  • 2 x 3 large garden-fresh tomatoes, minced
  • 4 x 5 cloves garlic, crushed
  • 1 lrg Onion, minced
  • 2 Tbsp. Flour, dissolved in 1 c cool water skim lowfat milk to taste splash balsamic vinegar lots of fresh basil, minced (1/2 c., minced) spinach noodles, cooked and liquid removed


  1. Saute/fry onion in vinegar. Add in can of artichokes and liquid. Make sure the pcs are bite-sized.
  2. Add in flour and stir while cooking for approxiately 5 min. Skim lowfat milk can be added to thin mix.
  3. Add in the minced tomatoes, and basil and cook for another 10-15 min.
  4. Serve over spinach noodles.
