Ingredients
- 1 (9 inch) unbaked pastry shell
- 1 pound (2 med.) yams or possibly sweet potatoes, cooked and peeled
- 1/2 c. butter, softened
- 1 (14 ounce.) can Eagle Brand lowfat milk (NOT evaporated)
- 1 teaspoon grnd nutmeg
- 1/4 teaspoon salt
- 2 Large eggs
Directions
- Preheat oven to 350 degrees. In large mixer bowl, mash yams with butter. Add in remaining ingredients except pastry shell and Large eggs. Beat till mix is smooth and well blended. Stir in Large eggs. Pour into prepared pastry shell. Bake 50 to 55 min or possibly till knife inserted near center comes out clean. Cold. Chill leftovers.
- TIP: 1 (16 or possibly 17 ounce.) can sweet potatoes or possibly yams can be substituted for fresh. Heat butter. Proceed as above.
