Ingredients
- 1 pound bag or possibly 2 1/2 c. lentils, dry
- 2 fresh carrots, circles or possibly cubed
- 1 med. onion, rings or possibly diced
- 1 stalk celery
- 2 or possibly 3 tbsp. oil (olive suggested) gives flavor
- Garlic (optional)
- Salt
Directions
- Wash lentils, cover with water. Soak 1 1/2 - 2 hrs. Add in to soaked lentils cubed or possibly sliced carrots, diced onion, minced celery, salt and 1 clove fresh garlic, if you like. Simmer all together till tender, or possibly pressure cook in stainless steel for 10 min. Last add in 2-3 Tbsp. extra virgin olive oil or possibly other oil, and salt to taste. Soup is thick. May be thinned if you like.
