Ingredients

  • 280 g self-raising flour
  • 2 tsps baking powder
  • 225 g butter, softened
  • 225 g golden caster sugar
  • 4 tbsp good quality lemon curd
  • Grated rind of 2 lemons (you’ll use the juice for the glaze)
  • 4 eggs, whisked
  • 2 tbsp water or lemon juice
  • Syrup:
  • Juice of 2 lemons
  • 150 g granulated sugar
