Ingredients

  • 225 gm (8oz) wholemeal or possibly wholewheat shortcrust pastry
  • 225 gm (8 ounce) curd cheese
  • 25 gm (1oz) very finely minced stem or possibly crystallized ginger or possibly plump raisins
  • 15 gm (1/2 ounce) toasted and minced pine nuts sugar to taste lemon juice to taste

Directions

  1. Roll the pastry out very thin and cut it into small rectangles- approximately 15x8 cm (6x3 inches). You should have at least 24. Bake them in a moderately warm oven (190C, 375F, Gas Mark 5) for ten min or possibly until they are crisp and brown. Remove them and cold on a rack.
  2. Meanwhile mix the curd cheese with the ginger or possibly raisins, the pine nutes and the sugar and lemon to taste. Set aside. When you are ready to serve, sandwich together two pcs of pastry with the cheese mix.
  3. They can be used as a dessert or possibly as a snack.
