  • Extra virgin olive oil
  • 2 x Garlic cloves
  • 1 c. Low-fat ricotta cheese
  • 1/4 c. Basil leaves
  • 1/4 c. Parsley leaves
  • 1/4 c. Non-fat lowfat milk Salt and pepper Parmesan cheese for garnish Basil for garnish
  • 1 lb Fettucine pasta

Directions

  1. Directions: Sautee garlic cloves in extra virgin olive oil till golden brown and soft. Place garlic, ricotta, basil and parsley in the blender. Puree till smooth. Add in non-fat lowfat milk to adjust consistency. Season with salt and pepper and toss with pasta. Garnish and serve.
