  1. Preheat oven to 350 degrees. Spray a 13-by-18 inch baking pan with nonstick cooking spray.
  2. Blend flour, baking pwdr, baking soda, cinnamon, salt and nutmeg in mixer bowl; set aside. In food processor fitted with blade, combine dates with water and process till almost smooth. Add in brown sugar, Large eggs, oil and vanilla. Pulse just till blended. Stir date mix and apples into flour mix just till blended. Spread batter into prepared pan. Bake for 25 min; don't overbake.
  3. Cold before cutting.
