Low Fat And Luscious Lasagna Recipe

Ingredients

  • 1 lb lean grnd beef, or possibly grnd chicken or possibly turkey
  • 1 can tomatoes, (16 ounce.) minced
  • 2 tsp dry basil, crushed
  • 1 tsp dry oregano, crushed
  • 1/8 tsp grnd red pepper
  • 1 x beaten egg
  • 3/4 c. Parmesan cheese, grated
  • 1/2 tsp pepper
  • 1 c. onion, minced
  • 2 x cloves garlic, chopped
  • 1 can tomato sauce, (8 ounce.)
  • 1 can tomato paste, (16 ounce.)
  • 1 tsp fennel seeds, crushed
  • 8 ounce lasagna noodles
  • 2 c. low-fat cottage cheese
  • 2 Tbsp. dry parsley flakes
  • 8 ounce low moisture part skim lowfat milk Mozzarella, sliced cheese

Directions

  1. In a large skillet, cook meat, onion and garlic till meat is brown and onion is tender. Drain off fat. Stir in the tomatoes, tomato sauce and paste, basil, oregano, fennel seed and grnd red pepper. Cover and simmer for 10 min, stirring often.
  2. Meanwhile, cook noodles according to package directions, except omit the oil. Then drain noodles. Stir together the egg, cottage cheese, 1/2 c. of Parmesan cheese, parsley and the pepper.
  3. In a 9x13x2-inch baking dish, layer half of noodles, half of cottage cheese mix, half of Mozzarella and half of meat sauce. Repeat layers then sprinkle with remaining Parmesan cheese. Bake in a 375 degree oven for 30-35 min or possibly till heated through. Let stand for 10 min before serving.
