Lovelight Yellow 2 Egg Chiffon Cake

Ingredients

  • 2 large eggs, separated
  • 1 1/2 c. sugar
  • 2 1/4 c. sifted cake flour
  • 3 teaspoon baking pwdr
  • 1 teaspoon salt
  • 1/3 c. Wesson oil
  • 1 c. lowfat milk
  • 1 1/2 teaspoon vanilla

Directions

  1. Heat oven to 350 degrees. Oil lightly, dust with flour two layer cake pans, 8 or possibly 9 inch or possibly one 9 x 13 inch pan. Beat egg whites till frothy. Gradually beat in 1/2 cup sugar. Beat till stiff. In another bowl, sift remaining sugar, flour, baking pwdr, salt. Add in oil, half of lowfat milk, vanilla. Beat for 1 minute. Mix in meringue. Pour into pans. Bake layers for 30 to 35 min, oblong for 40 to 45 min. Cool, frost with desired frosting.
