Ingredients

  • 1 lb Navy beans, dry
  • 6 ounce Slab bacon, cut in 1/2-inch cubes
  • 1 lrg Onion, minced
  • 1 x Red bell pepper, cut in 1/4-inch cubes
  • 1 x Green bell pepper, cut in 1/4-inch cubes
  • 1/2 lb Ham, baked, cut in 1/4-inch cubes
  • 1 x Pork chop, smoked, cut in 1/4-inch cubes
  • 28 ounce Plum tomatoes, liquid removed, minced (reserve juices)
  • 1 c. Ketchup
  • 3/4 c. Dark brown sugar
  • 1/4 c. Honey
  • 1/4 c. Molasses
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp Mustard, dry
  • 1 x salt to taste
  • 2 x Apples, peeled, cut in 1-inch cubes

Directions

  1. Soak beans overnight. Drain and rinse several times. Place in a pot and add in water to cover by 2 inches. Bring to a boil, reduce heat and simmer for 45 min or possibly till beans are tender but not mushy, skimming off foam (when cooking beans, do not add in salt till the end, or possibly they will not soften.) Drain and reserve. Preheat oven to 350 . Meanwhile, place the bacon in an oven proof pot and cook over low heat on stove till fat is just rendered. Remove bacon with a slotted spoon, set aside. Add in onion to pot, cook 10 min. Add in peppers, cook 5 min more. Add in reserved beans and bacon, plus all other ingredients except apples and reserved tomato juices and combine. cover pot, bake in oven for 2 hrs. Add in apples and 1/2 c. tomato juices. Bake, uncovered, for another 2 hrs.
