Ingredients

  • 4 x lobsters - (1 1/4 lbs ea)
  • 1/2 x green pepper finely minced
  • 1 x pimento finely minced
  • 1 x egg
  • 1/2 c. mayonaisse
  • 1 Tbsp. additional mayonaisse
  • 1 Tbsp. bread crumbs
  • 1 tsp English mustard
  • 1 tsp paprika

Directions

  1. Boil lobsters and allow them to cold. Split lobsters in half and pick out the meat in the tail, body and claws. Thoroughly clean the body and tail shell halves, rinse and save. Cut lobster meat into 1/2-inch (bite-size) cubes.
  2. In a bowl, combine green pepper, bread crumbs, pimento, egg, mustard and 1/2 c. mayonaisse. Mix well. Add in lobster meat and mix gently. Spoon mix into cleaned lobster shells. Spread additional mayonaisse on top and sprinkle with paprika.
  3. Bake at 350 degrees for 15 to 20 min. Serve warm for an elegant meal, garnished with lemon and parsley.
  4. To serve cool, refrigeratethe baked lobster halves in the refrigerator and serve on a bed of lettuce or possibly other cleaned and washed greens.
