My husband's father's recipe for good old fashion southern cornbread - MUST be cooked in a cast iron skillet (seasoned).
Ingredients
- 2 cups cornmeal
- 2 cups flour
- 8 tsp baking powder
- 1/4 cup sugar
- 2 cups buttermilk (can use milk)
- 2 eggs
- 1/2 cup BACON grease (NOT OIL)
Directions
- Mix together dry ingredients
- Preheat oven to 400*
- Add eggs & milk to cornmeal mixture mix well (do not beat!)
- Place grease into skillet and put into hot oven.
- When grease is HOT, pour into cornbread mixture and mix (again - DO NOT BEAT) Pour into to hot skillet.
- Bake at 400* for 30-40 minutes - toothpick test after 30 minutes
