Directions

  1. Open your clams by seaming in kettle. Shake the clam meat from its shell.
  2. Split the neck and cut out the stomach with scissors. Wash the clam in cool water, picking out any noticeable sand particles from the meat.
  3. Place clams in the Easy Cure brine solution for 30 min. Rinse lightly in hot water and allow to air dry for 40 min.
  4. Smoke for approximately 2 hrs using wood fuel of choice.
