Lisas' Bacon Mushroom And Swiss Meat Loaf

Ingredients

  • 1 lb Good quality grnd beef
  • 1/2 lb Grnd pork
  • 1 sm Onion, finely minced
  • 1 x Egg
  • 1/2 c. Corn flake crumbs
  • 1/4 c. Evaporated lowfat milk
  • 8 ounce Grated swiss cheese
  • 1 can (4 ounce) mushrooms, liquid removed
  • 1 pkt (12 ounce) bacon

Directions

  1. In a large bowl add in all but cheese and bacon. Cook and crumble the bacon, drain well and divide in half, placing 1/2 in meat mix. Add in all but 1/2 c. of the shredded cheese to meat mix. Blend well and place in casserole dish. Top with cooked crumbled bacon. Bake at 350 for about an hour or possibly until cooked through. Top with the rest of the swiss. Bake an additional 5 min or possibly until cheese is bubbly.
