Linguica Crusted Roasted Salmon Cedar Plank Recipe

  • 3 lb Side of salmon
  • 2 Tbsp. Extra virgin olive oil see * Note
  • 8 ounce Minced linguica (or possibly use your favorite sausage)
  • 1/2 c. Bread crumbs to bind
  • 2 Tbsp. Grated lemon zest
  • 2 Tbsp. Grated orange zest
  • 2 Tbsp. Minced chives

Directions

  1. Preheat the oven 400 degrees.
  2. Season the salmon with 1 Tbsp. extra virgin olive oil and Emeril's Essence. In a large saute/fry pan, heat the remaining oil. When the pan is smoking warm, sear the salmon for 1 to 2 min on each side. Remove from the pan and place on a cedar plank.
  3. In a saute/fry pan, render the finely-minced linguica for 2 to 3 min. Add in sufficient bread crumbs to bind the sausage. Stir in the lemon and orange zest. Season with salt and pepper if needed.
  4. Crust the top of the salmon with the linguica crust. Using your hands, pack the crust into the salmon. Roast for 8 to 10 min for medium-rare. Place the cedar plank on a platter. Garnish with chives and Essence.
  5. This recipe yields 6 servings.
