Ingredients

  • 3/4 c. Sugar
  • 3 tsp Cornstarch
  • 2 1/2 tsp Fresh. grated peel of 2 lime
  • 1/3 c. Fresh lime juice
  • 1 c. Half and half
  • 1/4 c. Unsalted butter, room temp.
  • 1 c. Lowfat sour cream
  • 1 x Baked 9" pie shell
  • 1 tsp sugar (1 to 2)
  • 1 c. Whipping cream

Directions

  1. Combine 3/4 c. sugar with cornstarch and lime peel in medium saucepan and mix well. Add in lime juice and stir till smooth. Blend in half and half and butter.
  2. Place over medium heat and stir till mix thickens and starts to boil,about 10 to 12 min.
  3. Remove from heat and let cold, stirring occasionally.
  4. Mix in lowfat sour cream. Turn mix into baked pie shell. Combine whippingcream and 1 to 2 Tablespoons sugar in medium bowl and whip to soft peaks. Spread atoppie and serve.
