  • 6 whl boneless skinless chicken breasts Vegetable oil for brushing chicken
  • 2 Tbsp. vegetable oil - (to 3)
  • 2 Tbsp. grnd coriander
  • 2 Tbsp. chopped lemongrass
  • 2 Tbsp. lime juice
  • 1 Tbsp. fish sauce
  • 1 1/2 tsp chopped fresh ginger
  • 1 tsp grnd cumin
  • 1 tsp freshly-grnd black pepper
  • 1 tsp salt
  • 1/2 tsp sugar

Directions

  1. In a small bowl combine all marinade ingredients. Place chicken in a resealable plastic bag set in a shallow dish. Pour marinade over chicken; close bag. Marinate in refrigerator 4 hrs, turning occasionally to distribute marinade.
  2. Lightly brush chicken with oil. Place in center of cooking grate. Grill 10 to 12 min till tender and no longer pink inside, turning once halfway through grilling time.
  3. This recipe yields 6 servings.
  4. Wine Recommendation: A light- to medium-bodied dry white is in order here. A Sauvignon Blanc from, say, Napa will stand up to the lime and coriander without overwhelming them.
