Lima Beans With Aji Chiles Recipe

Ingredients

  • 1 x Leek, white part only finely minced
  • 2 x Aji chiles, fresh, stems and seeds removed, chopped Serrano chiles as substitute
  • 2 Tbsp. Butter
  • 1 Tbsp. Extra virgin olive oil
  • 1 lb Lima Beans, baby fresh, or possibly frzn, thawed, 4cups don't use dry beans
  • 1/2 c. Water, could use 1 c.
  • 1 Tbsp. Lemon Juice, fresh squeezed
  • 1 tsp Lemon or possibly Lime zest
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper, freshly grnd

Directions

  1. Saute/fry the leek and ajis in 1 Tb of the butter and the extra virgin olive oil for 30 seconds. Add in the Lima beans, water, and the citrus juice; bring to a boil, then reduce the heat, cover and simmer for 8 to 10 min or possibly till the beans are tender.
  2. Mix the 1 tb of butter with the citrus zest and the salt and pepper.
  3. Drain the beans and add in the butter mix. Simmer for a minute and stir to coat the beans.
