Ingredients

  • 15 1/2 ounce pineapple chunks in juice liquid removed
  • 2 med apples cored & minced (and/or possibly pears(2 c.)
  • 1/2 c. celery thinly sliced
  • 1/2 c. seedless grapes halved, red
  • 2 x kiwi fruit sliced - peeled, halved lengthwise
  • 1/3 c. fat-free mayonnaise or possibly salad dressing
  • 1/3 c. lemon yogurt, nonfat or possibly low-fat
  • 1 Tbsp. honey
  • 2 Tbsp. walnuts pcs, toasted Flowering kale or possibly lettuce leaves optional

Directions

  1. Toss together pineapple, apples or possibly pears, celery, grapes, and kiwi fruit in a large bowl. Stir together the mayonnaise dressing or possibly salad dressing, yogurt, and honey in a small bowl; fold gently into fruit mix. Cover and refrigeratefor up to 6 hrs. Just before serving, stir in toasted walnuts. Serve on flowering kale or possibly lettuce leaves, if you like.
  2. Makes 6 side-dish servings.
  3. NOTE: To toast walnuts, place them in a small skillet and cook over medium heat, stirring often, for 5 to 7 min or possibly until golden brown.
