Ingredients

  • 2 egg yolks
  • 2 c. (500 ml) lowfat milk
  • 2 c. (500 ml) all-purpose flour
  • 1 T (15 ml) baking pwdr
  • 1/2 teaspoon (2 ml) salt
  • 1/3 c. (75 ml) oil
  • 2 egg whites, stiffly beaten

Directions

  1. Preheat waffle maker. Put all ingredients except egg whites in a large mixer bowl. Beat on low till moistened. Increase to medium, mix till smooth. By hand, gently mix in beaten egg whites. Pour 1/2 cup (125 ml) batter over grids. Close waffle maker, bake till golden brown, 2 1/2 to 3 min. Repeat. Serve hot with your favorite topping. Yield: 8 round waffles or possibly 16 square waffles.
