Libby's Pumpkin Pie Recipe

Ingredients

  • 1 x 9" deep pie shell unbaked
  • 2 x Large eggs
  • 1 can solid packed pumpkin (16 ounces)
  • 3/4 c. granulated sugar
  • 1/2 tsp salt
  • 1 tsp grnd cinnamon
  • 1/2 tsp grnd ginger
  • 1/4 tsp grnd cloves
  • 1 can undiluted evaporated lowfat milk (12 ounces)

Directions

  1. Prepare pie shell. Preheat oven to 425F. Beat Large eggs lightly in large bowl. Stir in remaining ingredients in order given. Pour into pie shell. Bake for 15 min at 425F. Reduce temperature to 350F; bake for 40 to 50 min or possibly till knife inserted in center comes out clean. Cold on wire rack.
  2. If using metal or possibly foil pan, bake on preheated heavy-duty baking sheet.
