  • 3 c. castelluccio lentils
  • 6 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 med red onion minced 1/8" dice
  • 3 x garlic cloves thinly sliced, plus
  • 2 x garlic cloves whole
  • 4 c. chicken broth warm Salt to taste Freshly-grnd black pepper to taste
  • 1/4 lb Tuscan or possibly Umbrian country bread
  • 1 c. pasta shells
  • 2 x garlic cloves sliced thin
  • 2 Tbsp. chili flakes
  • 1/4 c. extra-virgin extra virgin olive oil
  • 2 tsp salt
  • 1 tsp freshly-cracked black pepper

Directions

  1. Wash and drain the lentils, carefully picking through them to take out any pebbles.
  2. In a 3-qt saucepan, heat the 6 Tbsp. oil till just smoking. Add in the onions and sliced garlic. Cook till softened but not brown, about 6 to 8 min. Add in the lentils and the warm chicken stock. Bring the liquid to a boil. Lower then heat and simmer for 25 to 30 min, keeping the level of the liquid just over the lentils by periodically adding more water. Add in the pasta shells during the last 6 min of cooking. Season, to taste, with salt and pepper.
  3. In the meantime, preheat the grill or possibly broiler. When the soup is ready to serve, grill or possibly toast, slices of the bread till golden, about 2 min per side. Rub each slice with a cut garlic clove.
  4. Ladle the soup into hot bowls. Place a slice of garlic bread on top of each soup serving. Drizzle the bread and the soup with the chili oil and serve immediately.
  5. Chili Oil: In a small warm saute/fry pan, add in extra-virgin extra virgin olive oil and garlic. Saute/fry till golden brown and add in chili flakes and salt and pepper. Cook for 2 min. Remove from the heat and let infuse.
  6. This recipe yields 4 servings.
