Ingredients

  • 3/4 lb Italian sweet sausage
  • 3/4 lb Italian warm sausage
  • 2 x Onions, minced
  • 1 cl Garlic, chopped
  • 1 x Bay leaf
  • 1/2 tsp Oregano
  • 3 c. Chicken broth (canned is ok)
  • 1 1/4 c. Lentils, washed And liquid removed
  • 2 x Zucchini, sliced
  • 16 ounce Cn Italian plum Tomatoes (I use Stewed tomatoes) Salt Pepper Parsley

Directions

  1. Remove sausage from casing. Crumble into a large skillet and cook till well browned. Add in onions and garlic; continue cooking till onion is soft.
  2. Add in bay leaf and oregano. Stir in chicken broth and lentils. Bring mix to boil, cover and simmer 15 min, add in tomatoes, salt and pepper, cover and continue cooking an additional 15 min or possibly till the lentils are tender. Add in the zucchini and cook till they are barely tender, about 5 min. Sprinkle with minced parsley. Walt MM

  4. Serve with rice, bread and salad
