Lemon Soup With Garbanzo Beans

Ingredients

  • 6 c. Chicken broth
  • 1 can (15-16 ounce) garbanzo beans, rinsed and liquid removed
  • 6 x Garlic cloves, minced
  • 1 1/2 tsp Grnd turmeric
  • 1/8 tsp Cumin seeds
  • 2 lrg Large eggs
  • 1/4 c. Fresh lemon juice
  • 1 pch Cayenne pepper
  • 2 Tbsp. Minced fresh mint

Directions

  1. Combine broth, beans, garlic, turmeric and cumin in large saucepan, bring to a boil. Reduce heat and simmer 15 min. Whisk Large eggs and lemon juice till well-blended.
  2. Gradually whisk 2 c. soup into egg mix. Return to saucepan. Stir over medium-low heat till heated through, about 5 min. (Don't boil.) Add in cayenne. Season with salt. Ladle into bowls, sprinkle with mint.
