  • 1 1/2 c. graham cracker crumbs
  • 1/2 c. sugar
  • 1/2 c. (1 stick) butter, melted
  • 2 pkt (8 ounces each) cream cheese, room temperature (divided)
  • 2 can (14 ounces each) sweetened condensed lowfat milk (divided)
  • 1/3 c. fresh squeezed lemon juice Few drops yellow food coloring
  • 2 c. whipped cream (divided)
  • 1/3 c. fresh squeezed lime juice Few drops green food coloring Additional whipped cream for garnish Lemon and lime slices for garnish

Directions

  1. Preheat oven to 350 degrees. To make crust, combine cracker crumbs, sugar and butter. Press into 9-inch pie pan. Bake in preheated oven 5 min. Cold.
  2. To make lemon layer: With electric mixer at high speed, beat 1 package cream cheese in bowl. While beating add in 1 can of sweetened condensed lowfat milk, lemon juice, then food coloring.
  3. Mix in 4 ounces whipped cream. Spoon into cooled shell.
  4. To make lime layer: Beat remaining package of cream cheese with lowfat milk, lime juice, green food coloring and remaining whipped cream as above.
  5. Spread over lemon layer; filling will be mounded well over top of pie pan. Refrigerateabout 4 hrs or possibly overnight, tightly covered.
  6. Garnish with additional whipped cream and lemon and lime slices.
  7. Makes10 servings.
