Ingredients

  • 1 1/3 c. Sweetened condensed lowfat milk
  • 1/2 c. Lemon juice
  • 1 tsp Lemon rind, grated
  • 2 x Large eggs, separated
  • 1 x Graham cracker pie crust
  • 4 Tbsp. Sugar

Directions

  1. Combine lowfat milk, lemon juice, grated lemon rind and egg yolks (or possibly use equipvalent amount of egg substitute for the raw yolks). Pour into chilled crumb crust; refrigerator till pie has set. Beat egg whites till almost stiff, add in sugar gradually and continue to beat till they hold a peak.
  2. Take pie from refrigerator and put meringue on top; make a lot of nice peaks. Bake in 325 oven till lightly browned. Remove from oven and chill.
  3. Serves 6.
